This Pumpkin Spice Granola is sweet, crunchy & full of delicious pumpkin spice! Perfect served as a snack, with milk as a cereal, over yogurt with fruit, or even as a sweet treat to satisfy your sweet tooth!

Serves: 8
  1. Preheat oven to 325°F.
  2. On the stove or in a microwave safe bowl, heat the maple syrup, pumpkin puree and coconut oil until the oil is melted and it's a smooth mixture. Next, stir in the vanilla, pumpkin pie spice and sea salt.
  3. In a mixing bowl, combine the oats, dried cranberries and pecans.
  4. Pour the pumpkin mixture over the oat mixture and stir until completely coated.
  5. Line a baking sheet with parchment paper and spread the granola mixture out on the pan.
  6. Bake for 30-35 minutes, stirring in between. You can tell the granola is done when the edges and tops of the granola look crispy and browned. Let cool before enjoying!!
This granola should stay fresh in an airtight container for up to 1 week.
