5-Minute Edible Cookie Dough for One [Paleo, Vegan, Gluten Free]

Today I’m bringing you this 5-Minute Edible Cookie Dough for One because who doesn’t need a quick go-to dessert! I created this recipe a few weeks ago when I was having some major pregnancy sugar cravings and oh my did it hit the spot! I ate multiple batches of this baby and it never seemed to get old! It’s my new go-to when my sweet tooth kicks in and it’s great because it’s better than so many other dessert options. It’s naturally sweetened and doesn’t have all of the questionable ingredients you find in store bought desserts!

NOTES

One thing that is so fun about this recipe is that you can make it any cookie flavor you want! You can literally put whatever add-in’s you want and it will be good! I personally love traditional chocolate chips and peanut butter, if you can’t tell from the pictures. Some options that would be great are: chocolate chips, nuts like pecans or macadamia nuts, cacao nibs, sprinkles, and nut butter. This cookie dough would also be great rolled into balls if you wanted to serve it to a crowd. To make them extra pretty, you can roll them in sugar, cocoa powder or sprinkles!

This recipe can easily be doubled or tripled- and will stay good in the fridge for up to 2-3 days. After that it will begin to dry out.

I don’t suggest trying to bake this dough. It’s meant to be eaten as is!

This Edible Cookie Dough is grain free, gluten free, naturally sweetened, plant based and paleo! One thing I love about the recipe is that even though it doesn’t use regular flour, the texture is still smooth and you really can’t even tell! You will just want to make sure that the almond flour you use is very fine. I suggest using blanched almond flour (here is what I use and love it!) because it can be ground much better. Regular almond flour is typically more coarse.

Ingredients
  • ½ cup Almond Flour
  • 2 Tbsp Coconut Flour
  • 2 Tbsp Maple Syrup
  • ½ Tbsp Coconut Oil
  • ½ tsp Vanilla Extract
  • Pinch of Sea Salt
  • 1-2 Tbsp add ins: Chocolate Chips, Pecans, Macadamia Nuts, Cacao Nibs, nut butter of choice, etc.
Instructions
  1. Mix all of the ingredients in a bowl until combined. Add desired add-ins and enjoy!

    I have everything except coconut flour. Is it really necessary?

      Hi Barbara, you can sub another flour and it should come out just fine! It may change the consistency a little bit, but I don’t think it would change the flavor.

    The cupboards are pretty bare at my house so, I didnt have any of the mix-in’s but, it was still really yummy plain! Definitely cured my cravings and was super easy!
