Roasted Okra

Ok friends, this is coming from a southern girl so believe me when I say this Roasted Okra is just as good as fried okra! WHAT!? Yes, it’s true. Guilt-free, crispy and seasoned okra. If you don’t believe me, try it for yourself!

Okra is full of health benefits and the good news is that it doesn’t have to be fried to taste good! So many times okra seems to be over looked but it’s a high- antioxidant food that we shouldn’t forget about. It is high in vitamins and minerals, including vitamins C and A, thiamin, folic acid, and zinc. Okra is a great source of calcium and protein, can help stabilize blood sugar, lower cholesterol, improve heart health and even help improve eyesight!

This recipe is quick and simple. It makes 6-8 servings and you can easily cut the recipe in half if you need. It only has 4 ingredients: okra, olive oil, salt and garlic powder. Make sure the okra is evenly coated in oil and seasonings and then roast in the oven. If you want some extra spice, paprika and a little cayenne pepper would also taste great on these!

Tis’ the season to enjoy okra, so go enjoy it while it lasts! (Because we all know frozen okra just isn’t the same!)

Ingredients
  • 2 lbs okra
  • 2 Tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp salt
Instructions
  1. Preheat oven to 425° F.
  2. Wash and cut okra into ~1/2 inch pieces. I kept the tiny okra whole and only cut the larger pieces. You want to make sure they are all close enough in size to where they cook evenly.
  3. Gently toss okra in olive oil with garlic powder and salt until they are all evenly coated.
  4. Place on baking sheet and roast in preheated oven for 15-20 minutes, stirring in between. Okra should be browned on the edges.
  5. Let cool for 1-2 minutes before serving. Enjoy!
