Creamy Avocado & Spinach Pasta

Serves: 3-5
  • 3½ cups dry pasta (use gluten free pasta if needed)
  • ½ cup cashews
  • 1 garlic clove
  • 2 Tbsp nutritional seasoning
  • 1 avocado
  • 1 cup fresh spinach, packed tight
  • ¼ cup water + more if needed
  • ½ tsp Salt
  • ½ cup steamed green peas
  1. Pasta: Bring a pot of water to a boil and then place the pasta in. Cook according to instructions on box, usually for 10-12 minutes stirring occasionally. Once cooked, strain & set aside until sauce is ready.
  2. Sauce: In food processor, process the cashews, garlic clove and nutritional seasoning until very fine (about 20-30 seconds). Next, add the avocado, spinach, water and salt. Process until creamy. Add more water if needed for smooth consistency.
  3. Prepare: Gently stir the sauce into the pasta until combined. Garnish with the peas and serve immediately! Enjoy!
Since this is made with avocado, it is best served immediately. Store leftovers in an airtight container and enjoy within 1 day.
